☕ About Our Coffee

Why should I rest my beans after roasting?

Freshly roasted coffee releases CO₂ — a process called degassing. If you brew too soon after roasting, that CO₂ interferes with water absorption and can lead to an uneven, underdeveloped cup with a sour or hollow taste.

We recommend resting most beans for 5–10 days after the roast date before brewing. Light roasts benefit from a slightly longer rest (closer to 10 days), while medium roasts are typically ready around day 5–7. Co-ferments or experimental coffees should rest around 14 days. After resting, your coffee will be at peak flavor and will stay great for 3–4 weeks when stored properly.

All of our bags include a roast date so you know exactly where you are in the rest window.

Can you grind my coffee for me?

Yes! We're happy to grind your coffee before shipping. Just leave a note at checkout with your preferred grind type:

  • Pour Over – medium-fine (sea salt texture)
  • Drip – medium (coarse sand texture)
  • Espresso – fine (table salt texture)
  • French Press – coarse (rough sea salt texture)

⚠️ Important: Pre-ground coffee goes stale faster than whole bean. We recommend grinding just before brewing for the best flavor. If you do request a grind, make sure to use your coffee within 1–2 weeks and store it in a sealed, airtight container away from light and heat.

What does "roasted to order" mean?

It means we don't pre-roast and stockpile bags of coffee. Every order triggers a fresh roast — your beans go from green to roasted specifically for your order, then ship within 48 hours. You receive coffee at peak freshness, not beans that have been sitting on a shelf.

Are your coffees single-origin?

Yes — all of our coffees are single-origin, meaning every bean in the bag comes from one specific farm, cooperative, or region. This lets the unique terroir, variety, and processing method of each origin shine through in the cup.
